Deep colours and aromatic intensity are fundamental characteristics of this wine. Ripe red and black fruit aromas as well as subtle oak notes and hints of spices. The palate has a fruity attack, good structure and it is very smooth, with concentrated plum and blackcurrant fruit flavours, well balanced with oak notes and a nice acidity. The finish is long, tasty and smooth with some fine tannins as a result of the oak ageing.
Food match: Slow cooked or BBQ meats, especially pork. Mature hard cheeses and richly sauced dishes.
VITICULTURE / VINIFICATION
Vines that grow on clay and limestone soils yield excellent grapes from indigenous and international varietals. The fresh summer nights and gentle winters are a key factor for the production of quality grapes. The maritime influence contributes to the production of wines with nice acidity,
a typical characteristic from this region. Vintage starts at the end of August and continues right through September.
The grapes, previously destemmed, underwent a
pre-fermentive maceration at low temperatures, for 24 hours. The alcoholic fermentation was in stainless steel tanks, with temperature control, between 26º and 28ºC,
for 12 days. Post-fermentative maceration in ‘cuvaison’ for 28 days. The wine was aged in American, French and
Portuguese oak barrels for 4 months.
